Have you ever had authentic Italian gelato? I had eaten gelato, but nothing like what Pinolo Gelateria makes. This hidden gem of the gelato world is something you simply must try.
Located at 3707 S.E. Division St., in Portland, Pinolo Gelateria is owned by Sandro Paolini and Ashe Lyon. Sandro moved to Portland from Italy a few some years ago, and missed the authentic Italian gelato his friends made at their shop in his hometown. "There was a gelato shop about 400 or 500 feet from my parents' house," he said. He got the idea of bringing authentic gelato to Portland, and then struggled to find the right equipment and ingredients.
"The machine they used wouldn't work on U.S. electrical circuits," he said. Having the right machine was critical to achieving the perfect texture Sandro wanted. Finally after some tweaking he was able to get the machine to work and produce the results he wanted.
Next he focused on the flavors.
"Pinolo means pine nut," he said. "It was my favorite gelato flavor as a kid, the smell was always in the air and it reminds me of home." After much tasting and testing, he determined that local pine nuts and hazelnuts did not produce the same tastes as Italian nuts. Like terroir affects the flavors of grapes for wine, it impacts nuts. He grew up near Pisa, so the terroir is impacted by the salty sea air. To capture that flavor he imports pine nuts and hazelnuts from Italy for the gelato.
